Chia Pudding

So simple, so healthy I make it every week. Loaded with healthy omega oils and calcium this treat mix, shake and store overnight in the fridge for a snack any time of day. For extra creaminess I use a mortar and pestle to break up 1/2 of the chia seeds before adding them in. Also fun to make dessert in a jar that you can take to work.

  • 1/4 cup white chia seeds (1 1/2 ounces)
  • 1/2 cup unsweetened canned coconut milk
  • 1/2 cup unsweetened almond milk
  • 3 1/2 tablespoons of maple syrup, coconut sugar, cane sugar, or agave nectar,
  • 1 1/2 teaspoons vanilla extract
  • 1/8 teaspoon kosher salt
  • 1/4 cup white chia seeds (1 1/2 ounces)
  • Garnish or layer in fresh fruit or nuts of choice
