Fall harvest reminds us to give thanks.
Just a few months ago this tree was filled with pink, spring blossoms a buzz with pollinating bees. As I pull a ripe, crisp apple from the tree, I am reminded of the respit she gave me from the summers heat. Not only does this tree feed me and many other critters, it also sequesters carbon-dioxide, provides a place for birds to nest and it is the fundamental ingredient to my home-made Thanksgivings Apple Pie. This giving tree also deserves our thanksgiving for her many gifts to us throughout the years.
Naturally Sweet Apple Sauce
I picked a few apples the other day (6 large), at a friends house and just cooked them up with the juice of one lemon, wedges from one clementine, a sprig of thyme and a bit of cinnamon and cardamom, no added sweetener or sugar of any kind. So far everyone says its the best apple sauce they ever tasted.
