Pumpkin Pudding


Vegan Pumpkin Pie Pudding

You can whip this super elegant treat up in under 10 minutes. Blissful Basil’s recipe for vegan pumpkin pie pudding combines bananas and avocado for potassium, fiber and heart healthy fats.  The spice mixture sharpens the taste and the brain while giving you the antimicrobial benefits for your gut.  This recipe makes 2 to 4 servings. We predict it will end up on your table more than once this fall. A great way to get all the health benefits from your halloween  pumpkins. Just boil  and cool the guts of your jack-o-lantern and blend with added honey or maple syrup. This fab photo is by Brooke Lark.

Mix these Ingredients

  • 2 just-ripe bananas, peeled*
  • 1/2 a ripe avocado, pitted and peeled
  • 3/4 cup pumpkin puree
  • 1/4 cup natural almond butter
  • 3 to 4 tablespoons pure maple syrup or to taste (I use 4)
  • 2 teaspoons pumpkin pie spice or to taste
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • Layer with coconut whipped cream
  • Top with figs, mint or crushed raw pecans
